recipes, The Kirby
House Cookbook dishes up offerings for
both the historian and cook.
The book offers
over 200 recipes in use at the Kirby House
Restaurant today, including our famous
Coconut Walnut Bread, Miss
Ellies Carrot Cake and the
Celery Seed Dressing.

to meet the Thomas Kirby family and discover what
brought them to Abilene; what influence they had
on the Victorian community of Abilene, Kansas,
and how they were affected by the time in which
they lived. The
Kirby House
Cookbook offers an array of interesting
tidbits including:
- A menu from
the historic Drovers Cottage,
circa 1871 in addition to typical menus
for breakfast, lunch and dinner during
the Victorian era.
- Lenas
Roll Recipe provided by Terry
Tietjens, renovator and entrepreneur who
established the present day restaurant
and who obtained the original recipe from
Lena Bensen. Lenas Restaurant
was famous for its food and remains a
landmark in Abilene.
- The family
tree of the Thomas Kirby family provided
by great-grandson John (Jack) Alexander.
- A recipe
for Apricot Ice from Gertrude
Kirby, daughter of Thomas and Anna, and
written in poetry form.
- A
sprinkling of Victorian era recipes.
- Review of
other food-related enterprises unique to
the Abilene area as well as a chronology
of some of the foods, food producers and
advertising techniques unique to the
Victorian era.

About
the author:
Meta Newell West taught Family
& Consumer Science (Home Economics) at
Abilene High School for 33 years. Her Catering
classes were well known locally and regionally
for their quality food preparation and unique
presentations.

A wide array of stories relating
to the foods and the history in The
Kirby House
Cookbook are available as presentations by
the author. Programs last approximately 15
to 20 minutes, but can be tailored to meet your
groups time frame and specific
